I need your help…
to make this dish complete.
Using up the pre roasted pepper and half a ripe avocado.
I had to use a ripe avocado for lunch (? had to, it was so ripe !)
Where’s the avocado you ask ?
Hidden inside the whole roasted red pepper.
Add some herbs?! I have basil or mint.
Topped it with Parmesan and my nutty seedy mix ( ground linseeds, sunflower seeds, almonds).
Totally made up on the hop for lunch, and the taste and colours were sublime ( sorry you missed the opening up to the contrasting avocado green with the red pepper. )
What last ingredient would you add ?
It was delicious, but I sense something missing to make it an amazing healthy wow dish, If i were to make it again what would you add? Something to contrast inside with texture and taste.
Barbara on Instagram suggests something salty like capers or anchovies, or something not so healthy like bacon bits. I like the idea of salty but not the softness of the capers or anchovies as I already have two soft ingredients. Bacon bits I like and was thinking that too. Paul had just made himself a spagetti carbonara so I was tempted.
